Whole30 Week 1
So it's been a little over a week of this Whole30 thing and wow it is kicking my butt. I've been really working on time management because almost every meal on this diet requires 20-60 minutes of preparation, or 24 hours of defrosting meat, or some weird ingredient you have to get at Natural Grocers, etc. (The kind of food that is required for Whole30 is the type that takes you to stores that don't provide bags at all so I've been working on remembering to bring those too.) It's a whole new, difficult world of cooking for one... But don't let that fool you!! I'm happy to be doing it. It is going to be sooo rewarding I can already tell. I have to keep telling that to myself as my coworkers wag brownies and peanut butter chocolate bars and rice krispies under my nose.
I've already been slimming down somehow. I have gotten a few comments even that others can tell! I've been taking some pictures of my progress as well, and it's reeeeally exciting. I have been working out a few times a week and focusing on different muscles and it's cool to actually see some results (and feel them). Working out with a full schedule is difficult, obviously. Another part of "adulting." I have to want results more than I want to lay in bed and watch Netflix.
I've figured out a few yummy foods, and actually been pretty proud of the some of the meals I've created.

Tonight for dinner I had some coconut flour, ghee fried chicken nuggets with some homemade organic ketchup! I most often end up eating some sort of meat and some roasted potatoes, and I have a salad for lunch pretty much every day!
Even when I'm lazy and I want to go out to eat, it's almost worse. I have to ask my poor waiter six hundred questions on what the food is cooked in, if there is any dairy or gluten or sugar, if I can get steamed veggies with that... We tip better than usual right now.
Aaaand classes are beginning! I've so far been loving them. I have two online classes and two night classes. It's a fun juggling act with work, so pray for me, but many have done it before, I can do it too!
